Cooking tips

Grill or fry over a medium heat for 4-6 minutes a side until it crisps, or lay it on a tray and bake at 200C / 180C fan / gas 6 for 12-15 minutes, which is easier when you are doing a lot at once. To lay it over a turkey crown, cover the breast for the first two thirds of the roast and take it off at the end so the skin colours. For pigs in blankets, stretch each rasher with the back of a knife first and it will wrap further - then 25-30 minutes at 200C / 180C fan / gas 6 wrapped round chipolatas. Store in the fridge at or below 5C. Suitable for freezing on the day of collection.
