Cooking tips
Take it out of the fridge 30-40 minutes before it goes in. Roast at 190C / 170C fan / gas 5, covered with foil, allowing about 40 minutes per kilo plus 20 minutes. Uncover for the last 20 minutes to colour the skin. It is done when the juices run clear at the thickest part, there is no pink meat, and it is steaming hot right through - or 70C at the centre for 2 minutes on a thermometer. Rest for at least 20 minutes before carving. Store in the fridge at or below 5C and cook within 2-3 days of collection.
