Our free range goose is the traditional centrepiece of a Christmas table. Slow-reared and full of flavour, it has rich, dark, succulent meat and crisp golden skin, with plenty of golden fat that makes the best roast potatoes you will ever taste. A goose of around 4-5kg will comfortably feed 6-8. Storage: Keep refrigerated at 0-4°C and use within 2 days of collection or delivery, or by the use-by date. Store on the bottom shelf in a covered dish so raw juices cannot drip onto other foods. Suitable for home freezing on the day of purchase: freeze at -18°C or below and use within 3 months. Defrost fully in the fridge (allow 24 hours per 2kg) and never refreeze once defrosted.

Cooking tips

Remove from the fridge 1 hour before cooking. Remove the giblets and pat the skin dry, prick the skin all over (not the meat) and rub with salt. Place on a rack in a roasting tin and roast at 180°C (160°C fan / gas 4) for approx 15 minutes per 500g plus 20 minutes. Pour off the fat every hour (keep it for roast potatoes). Cover with foil if the skin browns too quickly. The goose is cooked when the juices run clear and the thickest part of the thigh reaches 75°C. Rest, covered, for 30 minutes before carving.
