A boneless turkey crown that carves without wrestling over the bone, chipolatas and streaky bacon for wrapping them in, and your choice of sage and onion stuffing or sausage meat. Cooking tips
A running order for the whole pack. TURKEY CROWN. Out of the fridge 30-40 minutes before it goes in. Roast at 190C / 170C fan / gas 5, covered with foil, about 40 minutes per kilo plus 20 minutes - a 3lb crown is roughly 1 hour 15 minutes. Uncover for the last 20 minutes to colour the skin. It is done when the juices run clear, there is no pink meat and it is steaming hot through - or 70C at the centre for 2 minutes on a thermometer. Rest at least 20 minutes before carving; it will hold, covered, while everything else finishes. STUFFING. Balls or a dish, 190C / 170C fan / gas 5 for 30-40 minutes. Put it in when the crown comes out to rest. CHIPOLATAS AND BACON. Wrap the chipolatas in the streaky bacon, stretching each rasher with the back of a knife so it goes further. Roast at 200C / 180C fan / gas 6 for 25-30 minutes, alongside the stuffing. No pink in the middle, steaming hot through. Store everything in the fridge at or below 5C. The chipolatas, bacon and stuffing freeze on the day of collection; the crown is better cooked fresh.
